Ingredients
- 8 Large Egg Whites (can use 3 eggs and 4 egg whites if desired)
- 1 Organic Roma Tomato
- ¾ cup Organic Spinach
- ¾ cup Organic Mushrooms
- ½ Medium Onion
- ¼ cup Goat Cheese, crumbled
- Coconut Oil
- Fresh cracked Black Pepper, to taste
- Other desired ingredients, see step 5 under directions
Yields: 8 Egg bites; 2 Egg bites per serving and save remainder for breakfast throughout the week.

Instructions
- Preheat oven to 350° Using a paper towel, wipe each muffin cup with a small amount of coconut oil to keep mixture from sticking to pan.
- Chop the tomato (seeds removed), spinach, mushrooms, and onion. Fill each muffin cup with about⅓cup of the vegetable mixture.
- Top each muffin cup with egg white and sprinkle cups evenly with goat cheese crumbles. Crack desired amount of black pepper over the top of each cup.
- Place in oven on middle rack and bake for 25 minutes.
- These egg bake bites can be filled with any desired ingredients. Other recommended mixtures include: turkey bacon, green onions, artichoke hearts, feta cheese, white cheddar cheese, green/red peppers, turkey sausage, etc. Just fill each cup with ¼ cup of your favorite omelet fillers and top with egg.
Eggs are good sources of antioxidants known to protect the eye. Increased plasma concentrations of lutein and zeaxanthin in individuals consuming eggs are beneficial in those populations susceptible to developing macular degeneration and eye cataracts.
