Ingredients
4 Sweet Potatoes
1 Pound ground Turkey
1 can Black Beans
1 medium Onion, chopped
- 2 tbsp taco seasoning
½ cup white organic Goats Cheddar Cheese
1 cup Romaine lettuce, chopped or shredded
1 cup fresh Salsa, Homemade preferred
½ cup Plain Greek Yogurt (optional)
2 Green Onions, sliced thin (optional)
Yields: 4 servings

Tips: By Adding a little fat (in this case the goats cheese) to your sweet potato it increases your uptake of Beta Carotene. And precursor of Vitamin A- think healthy skin vitamin. Feed your family a yummy meal and gracefully age while doing it!
Instructions
- Preheat oven to 400° Thoroughly clean sweet potatoes and poke each potato with a fork several times. Brush baking sheet and each potato with olive oil. Wrap each potato loosely in foil, place potatoes on baking sheet, and place into the oven. Cook for approximately 40-45 minutes or until cooked through. (If time is tight, you can cook the potatoes in the microwave two at a time (without the foil!) for 8-10 minutes or until cooked through).
- Meanwhile, in a large skillet, combine ground turkey and onions and cook over medium heat until meat is browned. Drain juices and mix in taco seasoning (follow seasoning directions if additional cooking is needed). Mix in black beans and set mixture aside.
- Remove potatoes from oven and let cool for several minutes. Increase oven temperature to 450°.
- While wearing an oven mitt (I love Ove Gloves), slice each sweet potato in half length-wise and scoop inside of potato out leaving a thin layer (1/4 inch) of potato in the skin. Save inner potato for a later meal or a delicious snack.
- Brush potato skins, inside and outside, with olive oil, place on a baking sheet, and bake for about 5-7 minutes or until skin is crispy.
- Remove skins from oven, turn oven broiler to high, and fill with turkey meat mixture. Top with cheese and place under broiler to melt the cheese. Remove skins from the oven and top with lettuce, salsa, Greek yogurt, green onions, and avocado if desired.
