Ingredients

  • 2 large Egg Whites

  • 6 large Eggs

  • ¼ tsp Sea Salt

  • ¼ tsp Black Pepper

  • ⅓ cup Lite Almond Milk

  • 3 cups Organic Spinach

  • 2 Garlic cloves

  • 2 ½ tsp Extra Virgin Olive Oil, divided

  • 3 oz Turkey Bacon

  • 1 cup Onions, chopped

  • 1 tbsp fresh Chives, chopped

  • 3 oz crumbled Goat cheese

  • 1 cup Organic Mushrooms (optional)

Yields: 4 servings

Instructions

  1. Turn broiler onto high. In a large bowl, combine eggs, egg whites, salt, pepper, and almond milk. Whisk until well mixed.
  2. Using an oven safe skillet/pan, heat over medium heat. Cook turkey bacon until browned and crispy, flipping once. Remove bacon from pan and set aside. Add 1 tsp olive oil to the pan and sautéonions until well caramelized. Remove onion from pan and set aside. Add remaining olive oil, spinach, and garlic to the pan and cook until spinach is wilted.
  3. Crumble up the bacon. Add bacon, caramelized onions, and chives to spinach and garlic. Mix and spread out the mixture in the pan. Sprinkle goat cheese evenly over the mixture. Slowly pour egg mixture over cheese and spinach mixture.
  4. Cook over medium heat for 5-6 minutes or until eggs are mostly set.
  5. Place pan in oven under broiler, approximately 5 inches from broiler, and broil for 2-3 minutes or until browned.
  6. Carefully remove pan from oven and let set for 5 minutes before serving.
