Ingredients

  • 1/3 cup soy sauce

  • 1/3 cup tomato paste

  • 4 tbsp ginger, peeled And minced

  • 4 tbsp crushed garlic

  • 2 Tbsp honey

  • 1 tsp sesame oil

  • 1 tbsp sambal oelek

  • 1 bay leaf

  • 1 ½ flank or sirloin steak

Combine all marinade ingredients and pour over steak in a glass dish.

Cover and refrigerate for at least 4 hour, overnight is optimal.

Drizzle for Meat or Alternative

  • ¼ cup rice vinegar

  • 1Tbsp hoisin sauce

  • ¼ cup sweet chili sauce

  • ½ tsp sesame oil

Whisk together rice vinegar, hoisin, sweet chili sauce and sesame seed oil to make drizzle and put in a squeeze bottle.

The recipe made its’ way into the Radiate Wellness repertoire and larger than life debut ion tour in 2016 with an athletic group in Florida.  We haven’t looked back since. It is a must have on our recovery days now, without question! I have tweaked some ingredients like the almond butter instead of peanuts, soba noodles ( I use rice/pumpkin/lentil noodles If I can source them)I have removed peanuts as garnish for reasons like allergies and inflammatory causing.

Dressing

  • ¼ cup almond butter, smooth

  • ¼ cup rice vinegar

  • ½ cup good quality mayonnaise

  • 1 tsp sambal oelek
  • 3 Tbsp hot water
  • 2 Tbsp fresh lime juice

Mix almond butter, rice vinegar, mayonnaise, sambal oelek, hot water. Lime juice together and blend until smooth with a blending device. (handheld, Vitamix, food processor).

Salad

  • 6 cups mixed seasonal greens

  • 2 cups soba noodles, cooked, cooled and tossed in a tablespoon of Olive Oil

  • 2 carrots, julienned

  • 1 cup sugar snap peas, halved

Instructions

  1. Grill the steak for about 5 minutes per side -for medium rare. Let stand for 5 minutes on a cutting board and slice diagonally in thin strips. (or veg options accordingly).
  2. Toss the greens with some of the dressing and mound on individual plates.
  3. Place a quarter of the soba noodles on top of the greens.
  4. Assemble steak slices on soba noodles, top with carrots, sugar peas.
  5. Finish with a squeeze of the drizzle sauce.
